Job Summary
The Commis 2 – Asian Cuisine is responsible for assisting in the daily preparation and production of Asian dishes, ensuring that food is prepared according to established recipes, quality standards, and food safety regulations. The role supports the smooth operation of the Asian kitchen section while maintaining high standards of hygiene, consistency, and presentation.
Key Responsibilities
- Assist in the preparation and cooking of Asian dishes, including Chinese, Thai, Japanese, Korean, and other Asian cuisines as required.
- Prepare ingredients such as vegetables, meats, seafood, noodles, rice, sauces, stocks, and marinades.
- Follow recipes, portion controls, and presentation standards established by the senior chefs.
- Assist with mise en place and ensure all ingredients are prepared before service.
- Maintain cleanliness and hygiene in the kitchen, workstations, utensils, and equipment.
- Follow food safety standards, including proper food storage, temperature control, labeling, and stock rotation (FIFO).
- Support the Chef de Partie in daily kitchen operations and during busy service periods.
- Ensure ingredients are handled correctly to maintain freshness and quality.
- Assist with receiving, checking, and storing kitchen supplies.
- Minimize food waste and use ingredients efficiently.
- Follow company policies, HACCP procedures, and health and safety regulations.
- Maintain a professional attitude and work effectively as part of the kitchen team.
- Perform other reasonable duties assigned by the senior chef.
Skills and Competencies
- Basic cooking and knife skills.
- Knowledge of Asian sauces, spices, noodles, rice, and seasonings.
- Good organizational and time-management skills.
- Attention to detail and consistency in food preparation.
- Ability to follow instructions and standard recipes.
